Spin the Bottle: Twill Cellars
Spin the Bottle is our favorite way to hang out with winemakers we genuinely like and drink wines we’re excited to share. On Saturday, February 21st (from 2-6pm), we’re welcoming Twill Cellars, a Northern Willamette Valley producer rooted in long-term relationships—with the land, the vineyards, and the people behind the bottles.
Twill Cellars is owned by Darrel and his wife Molly, who planted their original 2+ acre vineyard back in 2000. More than 25 years later, they’re still committed to sustainable farming and sourcing fruit entirely from the Willamette Valley. What started as a small vineyard has grown into a thoughtful, vineyard-driven winery that focuses on place over flash and substance over hype.
Winemaking is led by Chris, who has been in production for nearly 20 years. He came to wine the long way—no formal training, just a college bartending job, a lot of reading, and working his way up through cellars. Before landing at Twill in 2013, he worked with producers like Evesham Wood and Matello (Goodfellow), picking up lessons in elegance, restraint, and knowing when not to intervene. Over time, Twill’s style really took shape when the team stopped trying to copy anyone else and started paying closer attention to what each vineyard wanted to say.
The Twill philosophy is simple and refreshing: premium Northern Willamette Valley vineyards, an underdog mentality, gravity in the wines, and ego-free pricing.
For this Spin the Bottle tasting, you’ll get to taste through a lineup that shows off both their range and their sense of place:

Pouring for the day will be Lance, Twill’s partner-in-arms, who got his start working with Skurnik back east and is currently splitting time between the Twill cellar and Sec Wines here in Portland. Expect thoughtful pours, zero sales pressure, and plenty of good wine conversation.
